Anatomical errors in the post-mortem inspection of pigs in Costa Rica

| Diğer Bilgiler: | In post-mortem sanitary inspection, accurate knowledge of each species’ anatomy is essential, as the correct identification of organs and their lymphatic drainage territories constitutes the technical foundation for evaluating lesions, guiding additional examinations when necessary, and ensuring the proper implementation of sanitary procedures. However, the document used in Costa Rica for the post-mortem sanitary inspection of pigs contains several anatomical errors, and clarifying and correcting them is highly relevant to students and professionals in veterinary medicine and related fields. Therefore, the objective of this study was to identify anatomical errors in the current official pig inspection document in force in Costa Rica and to analyze their possible technical implication in the correct execution and interpretation of post-mortem inspection procedures. To achieve this, the document DIPOA PG 003 (P) v 05, Ante- and Post-Mortem Pig Inspection, published by the Directorate of Food Safety for Animal Products (Dirección de Inocuidad de Productos de Origen Animal, DIPOA) in 2023 in Costa Rica, was analyzed, focusing on identifications, terminologies and descriptions of anatomical structures mentioned in the document, as well as the application of anatomical knowledge in the post-mortem inspection procedure. One of the most relevant anatomical inconsistencies in the document is the conceptualization error of the terms “tonsilas palatinas” (“palatine tonsils”) and “amígdalas” (“amygdalae”). According to the Costa Rican document, these structures must be visualized and extirpated, respectively. It is worth noting that pigs lack palatine tonsils and that, in veterinary anatomy, the term “amygdalae” refers to a brain structure. Furthermore, errors were identified in the nomenclature, concepts, descriptions, identification, and anatomical localization of various structures, not only during head inspections but also during inspections of viscera and carcasses. Therefore, precise anatomical knowledge is an essential technical requirement for adequately evaluating lesions during the post-mortem inspection and harmonizing the document in accordance with the current Nomina Anatomica Veterinaria (NAV), thereby strengthening the coherence and standardization of the procedure. |
