Opis:This paper includes a general description of the agents comprising the stages in the production and commercialization chain of panela (unrefined whole cane sugar). The objective was to determine the socioeconomic and environmental impact of this activity in the geographical area where the agricultural and agro-industrial stages occur. The Global Commodity Chain (GCC) and sustainable development approaches were used, which allow to establish socioeconomic interconnections between the different agents and players related to a product, as well as the environmental effects on the influence area. This study determined the effect of sugar cane producers and family-owned sugar cane mills (trapiches), located in the first stages of the chain, as invigorating and driving forces of sustainable development and family farming in the town of La Paz, San Ramón, Costa Rica.
