Omschrijving:Since the beginning of the XXthcentury, single cell protein production has represented abiotechnological option, which viability has been muchargued, for the handling and profitable disposal of largeamounts of agricultural and industrial waste materials. Due tothe nature of this process, lots of pollution sources can betransformed into useful materials with industrial, nutritionaland economical value. This paper overviews the historicalevolution of single cell protein, its importance andapplications, advantages and disadvantages of its use inindustrial processes, the main microorganisms known to be asource of SCP, the most representative substrates used fortheir growth, the biochemistry and key operations of theindustrial process, general economical facts and futureprospects. Nutritional aspects such as composition,nutritional value and limitations of SCP as a source of proteinfor human consumption are also reviewed.
