Perception of Peach Palm and Acceptance of a Functional Snack Based on Peach Palm (Bactris gasipaes Kunth) among Costa Rican Female Consumers

Cur Síos:A fried functional snack elaborated with 50% palm peach flour and 50% corn flour was used to determine its acceptance and also the perception of the fruit as an ingredient for other products. a survey was done with 163 women with ages between 21 to 76 years, from the Costarrican metropolitan area. Perception results showed that 84,6% of the women perceived palm peach as a healthy product. The level of acceptance was 8,99 in a 10 points scale. Both results give evidence of a product with high marketing potential. Other survey results show there is significant difference (p<0,05) in snack´s appearance, color, odor and flavor between the younger group (< 40 years old) and the older women, being the scores lower in the younger group. For marketing of this product it is important to include the calories in a nutritional label since 9,8% of the participants perceived that palm peach “can increase body weight”.
